Harvest Cranberry Apple Sauce

My heartiest thanks and congratulations to all of you who shared your recipes in my Fall Cooking Contest! Entries came from all over the country and beyond. Each recipe made me think of your warm, cozy kitchens and the comforting flavors of fall. There was a delicious butternut squash baked with coconut and pineapple concentrate; an ambitious Chai Caramel Pie (spanning 3 pages!); a unique warm apple salsa; a casserole of apples, sweet potatoes, dried cranberries and pears; Sweet Potato Pear Soup; a mac ‘n cheese with bacon (kudos to my youngest entrant, a 15-year-old from New Brunswick, Canada); plus colorful salads, decadent cakes, stuffings, frittatas, and even a smoothie. It was a tough call, but after much debate, I chose the dish … [Read more...]

Banana Bread with Coconut, Oats and Flaxseed

< taget="_blank" href="http://www.tastykitchen.com">Tastykitchen.com

Did anyone catch last weekend’s SNL episode where Justin Timberlake rocks out as a lovable block of tofu? “No meat, c’est chic!” he raps. It was one for the Vegheads. And this Farmgirl couldn’t be happier to have J.T. in her corner. But while I’m thrilled tofu has made it into our national zeitgeist and plant-based diets are hip again, mass-produced soy nuggets and energy bars aren’t going to make us any healthier. We know that avoiding processed foods and eating lots of whole foods prepared from scratch will make your body happier (and will probably buy you a few more years on your lifeline). But can you pull off a clean diet while living life in the fast lane? Absolutely. The solution is not at a take-out counter or … [Read more...]

Apple Custard Gratin

winning recipe - apple custard

Announcing the winner of our February Cooking Contest! This last contest, in which I asked you to share a recipe for someone you adore, drew the Farmgirl's biggest response ever. There were cupcakes, bread puddings, tarts, chocolate French toast, a very memorable asparagus pesto, dumplings, and even a three-course dinner. I loved hearing your stories and getting to taste your delicious cooking. Thank you to every one of you who entered the contest. It was a very close call! In the end, I chose Hidemi Walsh’s Apple Custard Gratin because of its warm, comforting flavors; simplicity (it took me 10 minutes to prep and 10 minutes in the oven); and originality. It didn't hurt that my kids gobbled up three batches in two days, including … [Read more...]

Pan-seared Tandoori Fish (or Tofu) with Mint Chutney

tandoori fish or tofu recipe

Last week, something happened on the way to my latte. I was reaching for my favorite white chocolate powder, which I always stir into my coffee, when I noticed the ingredients on the label. Well, sort of. Squinting to read the microscopic words (yes, I’m now that age), I realized I couldn’t pronounce any of them. It dawned on me that I had been greeting each day with a scoop of chemicals. After resolving last month to try and eat less c.r.a.p. (chemicals, refined sugar, artificial ingredients, and processed foods), I had been tanking my best intentions every morning. Bummer. Did I have to dump another indulgence down the drain? I peeked into my cupboards, scrutinizing the boxes of food I had stocked simply out of habit, convenience, … [Read more...]

dana-slatkin-photoby-blake-slatkin

Many of you have asked me how to add more vegetables to your diet in the New Year. So I thought I would reprint my recent interview in Food + Wine Magazine. How do you get your veggies on? Write to me and share with our readers! By Emily Thelin, Food + Wine Magazine Make a weekly trip to the farmers’ market. Fall in love with what’s on the stands. There’s always something colorful and appealing, and always someone enthusiastic to tell you what to do with it. If your farmers market closes for the winter, take a trip to the produce section of a natural foods store. Be sure to visit a local farmers market whenever you are in a warmer climate. Don’t be ashamed to use frozen veggies, because if they save you time, you’ll be … [Read more...]

Scallion Pancakes with Sweet Soy Dipping Sauce (Gluten-free)

Scallion pancakes with sweet soy dipping sauce

Makes about 2 dozen small (about 3-inches in diameter) pancakes, or 6-8 servings It’s beginning to feel a lot like…get me to January 1. If you’re already over the holidays, you’re not alone. All the forced festivity, cloying crooning and nonstop consuming can start to grate on nerves. But in light of the heartbreaking tragedies in last week’s news, let’s count our blessings. In the final stretch to the finish of 2012, I get busy cooking. For those I love. For those who are suffering or struggling. For those who are no longer here to enjoy the holidays. One ritual I always look forward to: Chinese food on Christmas Eve. It’s practically a cultural imperative. Some years we head to our favorite local restaurant for … [Read more...]
