Farmgirl Lentil Tacos with Pineapple Salsa

Cinco de Mayo is one holiday everyone can get in on. After all, it comes at a time of year when the sun is shining, spirits are up, and summer is so close we can almost taste it. Here in Los Angeles, where Latinos make up the majority of our population, fiestas are irresistible. And with a few good recipes, a Mexican-themed gathering is a cinch to pull off.

These vegan tacos, with their sassy spices and festive presentation, make me want to dance the Cucaracha. There is so much flavor and texture happening, you’d have to throw down a dozen before you got bored. They were the hit of my last class entitled Macro Mexican, and my family gobbled up the leftovers.

Here you actually get three recipes in one – a spice mix, the lentil filling, and a delicious salsa that comes by way of Chef Lee Gross of M Café. All three components can be scaled up and made ahead of time.

I like to use organic dried brown lentils and cook them myself (it’s easy to boil them like pasta or put them in a rice steamer). Keep them on hand in the freezer and you’ll have tacos in five minutes.

Serve these taco bar style (use a colorful serape as a tablecloth), along with fresh guacamole, shredded cheese, sour cream, lime wedges and hot sauce. With a couple pitchers of Agua Fresca, you’ve got a fiesta in the works…for Cinco de Mayo or any day. Just add good company!
