Peanut Butter Oatmeal Toffee CookiesSummertime is when I require peanut butter on a daily basis. It’s the one season when I actually have the time for fitness (don’t talk to me about the rest of the year), and peanut butter happens to be one of the yummiest ways to refuel after a hard workout. So when I decamp to vacation digs, first order of business is heading to the market for a jar of the nutty stuff.

 

After an arduous mountain hike in pelting rain, my daughter Audrey and I wanted to reward ourselves for our calorie-blazing efforts. We were craving something sweet, wholesome and indulgent all in one, and it had to involve plenty of peanut butter.

With inspiration from a few of the thousands of recipes we found online, we came up with this trail cookie, one you’ll want to gobble before, during, or after any summer excursion. The beauty of this cookie is that you can adjust it to answer your own cravings. Chocaholic? Add a handful of chunks from your favorite bar. Fruit lovers could add a cup of diced dried apricots or cranberries. And coconut addicts (like me) will want to add the tropical treat to the mix.

Find the best quality peanut butter on the shelf — I reach for the organic creamy kind with just one ingredient on the label. If you have a hand mixer or food processor available, the batter will come together in a matter of minutes. If not, make sure the ingredients are at room temperature so they will cream together easily.

And don’t skimp on the peanut butter…especially if you plan to work out hard this summer vacation.
