How do you start your day? If the word that comes to mind is gently, I’m jealous. Because when I think of my morning routine, I get the sweats.
It starts when I am awakened at 6 a.m. with a pounce from my bed-headed, footsie-pajama’d four-year-old. And it’s nonstop from there. Throw on clothes. Race to the kitchen, guzzle coffee, toss lunchboxes in backpacks. Rush, rush, rush. Off we go.
We all know breakfast is essential to getting a jump on the day. But, too often, it’s lost in the shuffle, sacrificed to a few more precious minutes of sleep. So here is my solution: put it between two slices of bread.
Delicious, energizing, and five-minutes to prepare, this breakfast sandwich is more satisfying than a protein shake, more nutritious than a waffle. No stove or utensils required.
If time is on your side, you can add avocado, tomato, greens, sprouts, pumpkin butter, your favorite chutney, or whatever you crave in the morning. Just squash it all down, wrap in a napkin or foil, and go.
With its balance of protein, good fats and sprouted grains, plus no added sugar, this is a breakfast with staying power. I’ve made it every morning this week and my energy has yet to tank…even mid-morning, when that Dirty Chai is starting to wear off.
Makes 1 sandwich
1 frozen vegan breakfast sausage (Morningstar makes a good organic one)
2 slices sprouted grain bread (my fave: Food For Life’s Ezekiel Cinnamon Raisin Bread or whole grain English muffin
2 slices cheese of your choice (organic mozzarella, organic cheddar, or rice cheese)
1 organic egg
Sea salt and freshly ground black pepper
Optional: avocado, tomato, salad greens, condiments
1. Place the sausage in the toaster oven and begin cooking at 350° F. After a couple minutes, place a slice of cheese on top of each of the bread slices and add to the toaster oven.
2. Crack the egg into a small soufflé dish or glass bowl and season with salt and pepper. Microwave on high for 30 seconds.
3. When the sausage is hot and the cheese melted, remove from the toaster oven. Place the cooked sausage and egg in between the bread slices and sandwich them together. Add condiments if desired. Wrap in a napkin and eat while hot.
